2 tbsp olive oil
1 tbsp rice vinegar
1 tbsp sherry vinegar
1 tsp mayonaise
salt and ground pepper to taste
1 small head escarole, cut into 1 inch ribbons
1 peach, sliced
4 oz. goat cheese, crumbled
1/2 cup toasted walnuts
Directions:
1. Whisk olive oil, rice vinegar, sherry vinegar, mayonaise, salt, and black pepper in a bowl until smooth.
2. Place escarole, peach slices, goat cheese, and walnuts in a large bowl; drizzle in vinegar mixture and toss to coat.

I have not personally made this salad yet, but I certainly will. I actually am really looking forward to it...I think it sounds delicious. Maybe I can even convince the kiddos to eat it. They love peaches!
Yes, we are still on our vacation and enjoying the sun and sand. My oldest is really becoming quite the boogie boarder. She has no fear of the ocean. Not too sure I like that. The water has been very rough the past few days. It hasn't stopped the kids one bit though. It makes me so happy to see them in love with the beach. It really brings back so many memories of my childhood.
Being here amongst family has brought back so many different feelings and emotions. I feel so blessed that we've had this time to spend. Living far away from our loved ones always makes coming back "home" a big event. I feel as if we never have enough time to fit it all in. We have been able to visit with some family that we haven't seen in a very long time and it is really nice. It makes me miss everyone A LOT.
Dinner conversation the other night was started by my 7 year old in which she was comparing South Carolina to here. She stated all the things she loves about South Carolina. Even though other family members did not share her "favorite" place to live, I sure do. I love where we have chosen to live and raise our family. I love that my girls like being G.R.I.T.S. I love becoming a southern girl. I think I can say that after 10 years :-) I enjoy coming back to visit and miss our family, but to me my heart belongs to South Carolina!
