Eat Your Vegetables!

Alright we all know veggies are very good for you.  I feel like lately I am struggling with getting the kids to eat more of them.  I make sure they have a different one each night. Some of their favorites are corn, sweet potatoes, cauliflower, carrots, cucumber and broccoli.  Then there is our four year old who loves brussel sprouts...go figure!  I cannot seem to get them to try anything new though.  It becomes a dinner battle and is very exhausting.  

We made it a new rule that they have to at least try what we put on their plate.  If they do not, they cannot get up from the table until they have a sample.  It sounds harsh, but I want them to be open to trying new things and not making a face before it's even in their mouths.  The other night it was almonds...not a vegetable but they all tried them and loved them.  I've succeeded with hummus too.  You just never know what they are going to like, so I want them to try it all.

I am trying to incorporate vegetables into their lunches so that when school begins they will be accustomed to taking it in their lunchbox. My goal for this coming school year is to have them take a variety of healthy foods.  What do your kids love to eat for lunch? Does anyone have advice?  They will take 2-3 bites of a carrot stick and that is it.  I thought about doing celery with peanut butter, but have not tried it yet.  This may not be the best approach, but I am willing to camouflage the veggies if that does the trick. Some nights at dinner  I do put cheese or some type of sauce on there to help get it down. Whatever it takes!!!  So, if ya'll have any suggestions, I'd love to hear them.  I'm desperate :-)

My husband and I are going to try a 30 day vegetable menu.  We attempted once before but it went astray.  I love vegetables but need to get more creative in what I cook.  Does anyone know of any good vegetarian cookbooks?  I'm excited for the challenge.  We will begin when we return from our visit with family.  I'll keep you posted on our progress.

Doesn't adding and eating more veggies and fruit into your diet just make you feel better? About 2 years ago my husband and I started buying bountiful baskets, a nationwide fruit and veggie co-op. It has really changed how many produce items we eat daily in our home. We also have so much fun as a family figuring out recipes for the items we get in the basket. Love your blog and so glad to have found it on the Aloha Friday hop!

Thank you! I agree...we did a veggie co-op basket this summer and just loved it. I can't wait to do it again. Thanks for the feedback. I checked out your site and subscribed. Love your blog...great indoor summer ideas. Looking forward to reading more.

I've just had to start packing my daughter's lunch. She's fairly good about veggies. She's 2.5yo and cutting things up into thin veggie stick has helped her and made it easier to crunch the veggies. Good luck!

Some great dishes that would incorporate lots of veggies include veggie burgers, stir-fries, soups, vegetarian chili. These are all delicious and there are lots of recipes for different ones online. I find allrecipes.com to have some great stuff. Good luck! Thanks for stopping by my blog! :)
