
Shaved Summer Vegetable Salad
How good does this look...I can't wait to make it. Yum!

Ingredients
For the vinaigrette:
Directions: Make the vinaigrette: Stir together the shallot, mustard, honey, vinegar, 3/4 teaspoon salt, and pepper to taste in a bowl. Whisk in the olive oil.
Thinly slice the zucchini and squash lengthwise (with a mandoline, if you have one, or a vegetable peeler), then thinly slice the beets and mushrooms. Drizzle with the vinaigrette and toss. Sprinkle with the chives, chervil and tarragon. Season to taste with salt and pepper.
This week's recipe comes from The Food Network Magazine. I absolutely love this magazine. I subscribe to it and look forward to it coming every time! I know, sad but true, we LOVE food :-) No, not that it is sad it is actually very joyful. It just makes losing weight harder. Not this week though. This recipe is a vegetable salad that I cannot wait to prepare. Maybe since we are trying to be on a veggie kick, I am hoping even the kiddos will like it.
Well, today is our last day of summer vacation. School begins tomorrow!!! Not, that I am excited haha! I can't believe my oldest is going to be a second grader. Where on earth does the time go? She is a bit nervous about this school year, but I know she will do fantastic.
I just love this time of year. I enjoy feeling like we are in more of a routine during the day. I LOVE football season. I absolutely love the weather it brings. I love Fall colors and watching the trees change. Although, up North the trees change more than here. They are still pretty though! I love going to the pumpkin patch. I love fall festivals and I love Thanksgiving. So much to love about Fall...so much to look forward to!
